Let’s prepare
To prepare this, firstly, wash and cut the gourd into four lengthwise pieces. After that put it in good oil and fry it. Do not add salt while frying. Similarly, deep fry in oil and take it. Change the curry when the color changes nicely. After roasting all the kova, add some mustard to the same oil. Similarly, add fenugreek seeds, grated chilli and few curry leaves. It should be cut well.
When the mustard seeds crackle, add ginger. Similarly add garlic and saute. Chili powder and less turmeric powder should be added to it. Add vinegar and salt to it and boil it well. Add the roasted kovacka to it. Mix them well. Powdered fruit should also be added to it. At the end some sugar can be added.
Be careful
Be careful to choose the right oil while preparing the pickle. But only pickles remain intact for a long time. Similarly, kaya can be added as required. If you want gravy, be careful to pour only boiled water. Otherwise, the pickle will bloom quickly. Similarly, Kashmiri chillies can be added along with hot chillies while preparing pickles to give a nice color to the pickles. Similarly you can add green chillies if you need. When adding green chillies, make sure to add it at the same time as the ginger is cooked.
How to store pickle
Any pickle can last long without spoiling if it is stored properly. So, you should make sure that there is no water content when you prepare the pickle. The ingredients used to prepare it should be well boiled and water free. Similarly, the bottle used to store the pickle should be washed well and dried in the sun. Otherwise, the pickle is more likely to bloom quickly. The oil should be clear on top of the pickle. Similarly, always use a dry spoon to pick up the pickle.

You can prepare this pickle very quickly and just for a day. You can add small onion while preparing it like this. Add small onion and saute well to remove the water from it. Make sure to add small onion only after adding ginger and garlic. After that you can prepare it as usual. Just adding a little vinegar is enough when preparing it like this.
